Chicken & Dumplings Recipe

One of many recipes passed down from my grandmother.

Ingredients

3 lb. chicken pieces
2 cans cream
1 lg. can cream of chicken soup
salt and pepper to taste
1 can biscuits/noodles

Directions

Put everything in crockpot except biscuits/noodles; simmer on low all day. In the last 30 minutes, add chopped up biscuits or pour in noodles and let cook. You can serve this over rice if you wish.

Chicken ‘N Dumplings Recipe

The dumplings in this recipe are easily made with refrigerator biscuits.

Ingredients

4 boneless skinless chicken breasts, cut in small chunks
2 cans condensed cream of chicken soup
1/4 C. onion, finely diced
2 C. water
2 10 oz. packages refrigerated biscuits
1 chicken bouillon cube

Directions

Combine all ingredients, except biscuits, in slow cooker. Cover and cook on low for 5 to 6 hours. 30 minutes before serving, tear biscuit dough into 1-inch pieces. Add to your slow cooker; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

Ingredients

3-4 chicken breasts, diced (cooked or uncooked)
3 stalks celery chopped
1/2 pkg. frozen carrots
4 cans chicken broth
1 can cream of chicken soup
1 can cream of celery soup
3/4 can water
2 Tbs. dried minced onion
2 tsp. dried minced garlic
1 Tbs. chicken or poultry seasoning
2 tsp. pepper
1 1/2 tsp. salt
1 8-oz. pkg. noodles

Directions

Combine first 12 ingredents in 6-qt. crock pot. Cook on low for 8-9 hours. Turn on high, stir in noodles and cook on high for 40 minutes.

Slow-Cooker Rustic Stew Recipe

This is a wonderful recipe for good ol’ chicken stew.

Ingredients

2 lb. boneless, skinless chicken breasts, washed, patted dry, cut into 1-inch cubes
3 medium onions, peeled, quartered
2 large carrots, peeled, cut into 1-inch-thick slices
2 potatoes, peeled, cut into 1-inch cubes
2 14 oz. cans fat-free, 1/3-less-sodium chicken broth
1 tsp. celery seed
1 tsp. dry thyme leaves
1/2 tsp. black pepper
8 oz. mushrooms, cleaned, halved
1 C. frozen corn
1 C. frozen peas

Directions

In a 5-to-6-quart slow cooker, combine the chicken, onions, carrots, potatoes and broth. Stir in the celery seeds, thyme, pepper, mushrooms and corn. Cover and cook on low until the chicken is done and the vegetables are tender, about 7-9 hours, or on high for 4-6 hours. Stir in the peas and cook until they’re done, about 15-30 minutes.

Shredded Chicken and Gravy Recipe

This is a lighter version of my Chicken and Gravy with Pasta but it is still delicious. Serve with buttered rice or cheesy mashed potatoes.

Ingredients

1 lb. chicken (I use tenderloins but you can use any boneless parts you prefer)
2 cans or jars chicken gravy (any brand)
1/2 bag baby carrots
1/2 tsp. dried parsley
2 C. mashed potatoes, already prepared

Directions

Salt and pepper chicken. Add 1/2 can gravy to room temperature slow cooker. Add seasoned chicken on top of gravy. Add remaining 1/2 can of gravy. Add carrots and cover. Cook on high for about 3 hours, or until chicken shreds with two forks.

Chicken Cacciatore For Two Recipe

This magnificent chicken cacciatore recipe is the winner of the Recipe4Living Herb Recipe Contest! Chicken thighs marinated with fresh rosemary, and thyme, sauteed in a light sauce with white wine, tomatoes, kalamata olives and garlic.

Ingredients

3 sm. tomatoes
4 chicken thighs
5-6 cloves garlic
1 sm. onion
1-2 C. white wine
1 C. chicken broth
olive oil
kalamata olives
fresh rosemary
fresh thyme
parsley
salt and pepper

Directions

Using a mortar and pestle, grind fresh thyme, rosemary, couple cloves of garlic and kosher salt into a paste. Rub the chicken thighs with the herb paste. Make sure to get it under the skin. Let chicken marinate for an hour….overnight wouldn’t hurt. Heat large saute pan, add olive oil. On medium heat, sear the chicken thighs on both sides. Drain the fat. Add 4 or 5 cloves of garlic, thinly sliced. Add one small onion finely chopped. Saute until fragrant.

1/2 C. flour
1 tsp. salt
1 Tbs. paprika
4 Tbs. olive oil
2 garlic cloves, minced
2 large sweet onions, thinly sliced
1 C. diced green pepper
1 2 lb. 3 oz. can tomatoes
1 8 oz. can tomato paste
2 chicken bouillon cubes, crushed
1 tsp. oregano
1/2 tsp. dried basil
1/4 tsp. pepper
1 whole bay leaf
1/4 C. red wine or herb vinegar

Creamy Chicken Stew Recipe

Use your chicken leftovers in this easy crockpot casserole that will even please the kids!

Ingredients

1 lb. leftover cooked chicken, diced
6 lg. Yukon potatoes, peeled and diced
1 bag fresh baby carrots, halved
1 lg. onion, diced
2 celery stalks, diced
3 C. water
1 chicken boullion cube
1 can cream of mushroom soup (cream of chicken or celery would work too)

Directions

Place diced potatoes, carrots, onion and celery in a crockpot. Mix 3 cups of water with chicken boullion cube and add to crockpot. Cook on high for approximately 3-4 hours. With a ladle, remove approx. 1-1/2 cups of chicken broth (you can always save this broth for another dish or lunch!) Add can of soup and the diced chicken. Stir well and cook for another 30 minutes. You can keep this simmering on low until ready to serve.
