Crockpot Chicken Enchiladas Recipe

This is so versatile as if you like lots of sauce, increase the sauce or if you enjoy cheese put extra cheese etc….add whole chills or corn. This is just a base recipe that can be doctored up to ones liking. We are partial to the base recipe.

Ingredients
1 can cream chicken
1 can cream celery
6 C. cooked chicken cubed or shredded
1 C. sour cream
Shredded Cheese any blend
Enchilada Sauce
Corn Tortillas
Directions
Layer ingredients in this order:
Red sauce
Tortillas
Chicken, soup, and sour cream mixed together
Shredded cheese
Repeat until all gone and then end with extra cheese on top.
Let cook in the crockpot on low for about 5 hrs. I put a little veggie oil on the bottom and sides before I started just helps to keep it from sticking. They don’t look real pretty because they are kind of just a casserole but mmmm mmm good. You can use fat free or light stuff too.
