Under crockpot chicken+ lasagna
I came up with this chicken Alredo lasagna because my family doesn’t like tomatoes. You can make it in the oven or crockpot using no cook noodles! Family and friends love it and always request it for pot lucks. Hope you enjoy it as much as we do!

Ingredients
1 1/2 lb. cooked rotisserie chicken (from deli)
1 med. white onion, diced*
2-3 cloves garlic, minced
1 Tbs. dried Italian seasoning
3 Tbs. olive oil
1 32-oz. jar favorite brand prepared Alfredo sauce
1 C. chicken broth
16 oz. sliced mushrooms, drained (optional)
salt and pepper to taste
12 lasagna noodles, uncooked
3 C. ricotta cheese
1 C. grated Parmesan cheese
3 C. shredded mozzarella cheese
2 eggs, beaten
*If you don’t like onions, try 1/4 C. finely diced chives.

Turkey Breast
1/2 tsp. each Salt, pepper, seasoning salt
1 can of chicken broth
Directions
Place turkey breast in crockpot that has been sprayed. Season breast with salt, pepper, and seasoning salt. Pour one can of chicken broth in crockpot and cook breast 4 hours on high or 6-7 on low, or until fork tender.

A homemade Italian dressing mix makes this chicken fabulously seasoned.

Ingredients
4 boneless chicken breast halves
1 envelope Italian salad dressing mix (homemade dressing mix recipe below)
1/2 C. water
1 8 oz. pkg. cream cheese, softened
1 can condensed cream of chicken soup, undiluted
1 4 oz. can mushroom stems and pieces, drained
Dressing Mix:
1 tsp. dried minced onion
1 Tbs. dried parsley leaves, crushed
1/2 tsp. ground oregano (I use 1 tsp dried oregano, crushed)
1/2 tsp. dried sweet basil leaves, crushed
1/4 tsp. ground thyme or marjoram
1/2 tsp. celery seed (I use celery salt)
1/2 tsp. garlic powder
2 Tbs. grated Parmesan cheese (I buy the good stuff and grate my own)
1 1/2 tsp. granulated sugar
1/8 tsp. salt
